Continue growing far past maturity if you want to save seeds. The seeds need to go through a process similar to natural rotting so store the fruit at room temperature for a few weeks before removing the seeds.
Scoop out the seeds and pulp in a water filled bowl to form a slurry of seeds and flesh. Allow the seeds to settle in the bottom. Repeat a few times until the seeds are separated. Strain, rinse and then leave to dry.
Store in an airtight container in a cool, dark and dry place.
