Beta vulgaris Cicla

Ruby Red

Description

With the mildest flavour of all chards, it is grown for its bright colour of ruby red stalks and dark green leaves.

Harvesting seed

Seeds mature at base of the flower stalks and continue upwards changing from green to brown.

Harvest seeds when about two-thirds of seeds turn brown.

Pull either stalks or the whole plant and leave to dry for about 10 days.

Thresh by running a gloved hand along the stalk. Screen and winnow and then store in cool dry conditions.
