Cichorium intybus

Description

An ancient variety with green leaves that are heavily blotched with red. Forms a loose inner head of red and white in Autumn.

A delicious winter salad ingredient.

Harvesting seed

A few outside leaves can be harvested for eating without harming seed production. Allow plants to dry completely after most of the flowers have set pods.

Pry open pods to release dry, hard seeds and then screen and winnow to remove debris.
